Chef Gilbert Langlois
Chef Gilbert Langlois grew up in Mokena, Illinois. After first moving to New Orleans (where he may or may not have learned his secret fried chicken recipe), Gilbert returned to Chicago to work at Pepper Lounge and receive critical acclaim for his work at Technicolor Kitchen, Rushmore, and Sushi Samba Rio as executive chef. In 2006 he purchased a building and opened Chalkboard. He quickly received three stars from critics and was selected as one of the Top 20 New Restaurants by Chicago Magazine. Gilbert is committed to ecological responsibility and emphasizes locally grown, organic, and sustainably harvested ingredients.
