Custom House is a family place, an honest place, a giving place. Sue and Peter are committed to treating people fairly and delivering astounding culinary experiences to their customers and friends. They are a nexus of the Chicago food world and their bacon dinner reflects that – merging the talents of their amazing chef Perry Hendrix, mix-master Adam Seger, the good folks at Goose Island as well as Baconfest fave Candid Wines. We’re grateful to have them as part of our Baconfest family. Come to their bacon dinner and you’ll be a member of the family too.

Dinner will be served family style.  Menu will include one or more of the following per course:

Passed Munchies:

mini bacon, peanut butter, banana sandwiches
Pretzel Bites with bacon cheddar sauce(would be nice to fill them
with sauce)
Grilled pork belly, grilled clam, pearl onion skewers with salsa verde
Bacon Fritters with Pickled Golden Raisins / Poached
Shrimp, Bacon Mayo & Tomato Jam

1st

Grilled treviso salad with bacon vin, goat cheese aged balsamic
Bacon terrine with whole grain mustard and pistachio( this seems
along the same idea as your bacon pate)
Cavetelli Carbonara- bacon, onion, cream
Bacon Pate with Dried Cherry Mustard / Bitter Greens
Salad, Grilled Pork Belly, Poached Egg & Croutons

2nd

Pork loin crepinette (pork loin is first wrapped in a bacon/apple
studded farce then rolled in caul fat and roasted) garnished with the
salad same as the current pork dish
Bacon wrapped trout romesco sauce charred scallion vin
Cured & Smoked Pork Loin with Apple & Celery

Sides

Potato Boulangere & Braised Collard Greens
russels with bacon, shallot and apple cider vi
Baked bacon cheddar grits

For dessert:
Brown Butter – Bacon fat Blondie, Maple Ice cream,
bourbon butterscotch, maple-pecan candied bacon
bacon custard with apple compote and clothbound cheddar
