Irene Rivera – Date and Bacon Jam Thumbprint Cookies
These delicate cream cheese cookies are studded with bacon and also filled with a sticky, sweet and salty date and bacon jam.
ingredients:
for jam:
pitted whole dates
simple syrup
chopped crispy bacon
cookies:
cream cheese
unsalted butter
sugar
all-purpose flour
salt
dried rosemary
chopped bacon

I have enjoyed cream cheese cookies before, with some type of fruity jam – ie raspberry. The bacon and date jam reminds me of my favorite primi at tapas restaurants the bacon wrapped dates! So good!!!!

Simple, maybe, but bacon in a cookie I think is simply brilliant. Especially if it works and this work very well. Proof is, I would actually make this recipe as a treat, not just put bacon for the sake of trying to add bacon to a recipe. Good job!

Let me share a food memory with all you fantastic voters. When I was a kid, my very large family would host very large family functions. When my polish aunt would host, my aunt and her mother Helen would bake the best kolackys. So good, I would eat several,probably more than my share. Helen has since passed away. A small chunk of my family has moved to Texas. Another small chunk has moved to the far suburbs, but we still manage to see each other, not as often and the group is much smaller, but still the purpose is the same. Families gather around food. My cookies don’t even compare to my aunt’s, but I would like to think of them as an ode to one of the best cookies ever! thanks for voting!!!!
