We at Baconfest Chicago want to help get the word out about the opening of a new bacon-centric establishment brought to you by our great friends and long-time supporters Chris Latchford and Patrick Berger, the dynamic duo behind Paddy Longs. Their new venture “KAISER TIGER” just opened, and word on the street is: it’s amazing. A true haven for those of you bacon/sausage/beer purists out there.
Among many other great offerings, they are featuring a BACON BOMB that looks just all kinds of wrong… in all the right ways.

Messrs Latchford and Berger’s history with Baconfest Chicago dates back to our early days at the Stan Mansion, and Paddy Long’s has never missed a year since. They consistently bring inventive and delicious dishes to Baconfest including last month’s: Beer and Bacon Sausage – hickory smoked bacon, pork, spices and Lagunitas IPA stuffed in a natural hog casing, wrapped in Nueske’s bacon and pan fried; served with pickled onion and house-made beer mustard.
It was a runner up for the “Most Creative Use of Bacon” 2014 Golden Rasher Award. Revelatory. So delicious. Anyway, the weather is warming up. Summer is afoot. Get down to restaurant row and check them out!! You will not be disappointed. And of course never forget the weekly bacon board and fine cuisine always on offer up at Paddy Longs on Diversy.
