Nuseke’s Bacon Meatloaf by Stella Lee

6 slices sour dough bread cut in cubes
one egg
2/3 c milk
tablespoon ground dijon mustard
1/2 tsp smoked salt
1/4 tsp pepper
1/2 tsp thyme
1 medium onion finely chopped ( red onion)
1/2 cup celery finely chopped
1/4 cup sundried tomato chopped
12 slices Nueske’s bacon
2 lbs ground beef ( 80% lean)


Combine milk egg and bread cubes, let stand 15 minutes, mash bread and liquid

Add all other ingredients except for ground beef

Add ground beef, mix well and refrigerate overnight

Bake 375 degrees for 45 minutes in a 5×8 loaf pan
