Triple Bacon Tilapia Tortillas
- Sprouted Corn Tortillas
- Bacon (of course)
- Tilapia Fillets
- Salt & Pepper
- Meyer Lemon
- Red Onion & Garlic
- Brown Rice
- Crimini Mushrooms
- Black Beans
- Heirloom Tomatoes
- Sunflower Seeds
- Strips of bacon are pan fried and and the fat rendered. Some of the excess fat is drizzled onto the corn tortillas for flavor (first use of bacon) and the remaining fat is used to pan fry the fish and vegetables (second use of bacon). The cooked bacon is made crispy and tops the tortillas in the end for flavor and texture (third use of bacon).
- The fish is seasoned with Sriracha, Meyer lemon juice & zest, salt and pepper.
- The onions and garlic are kissed with some honey and then carmelized in the bacon fat. Once browned the fish is added and cooked. Finally the mushrooms, tomatoes, black beans, olives, brown rice and sunflower seeds are added, warmed and folded in.
- The bacon fat drizzled corn tortillas have guacamole spread on them and then are topped with the cooked fish/rice/beans/mushrooms etc. These are then finished with the four pieces of crispy bacon shaped like a smiley face.
Lots of bacon flavor without using too much; since the other ingredients are so healthy this is actually a nutritious meal that is very flavorful, delicious and filling.
