Bacon Florentine Sandwich Cookie with Malted Maple Filling
The cookie takes the traditional recipe and replaces the almonds with ground pecans and bacon, moderating the sweetness of this lacy hybrid cookie/candy. Bonfire smoked salt kicks up the bacony flavor even further.

The filling is a riff on a buttercream, swapping malted milk powder for some of the sugar, to make it richer and further moderating the sweetness.

Pecans and cooked bacon are ground together, then mixed with the flour and salt. Sugar, butter, cream and vanilla cook up into a light caramel, which is mixed into the remainder of the ingredients, spooned out, baked into lacy discs and cooled.
The filling is made by whipping together the ingredients until silky smooth. A dollop of filling goes between two cooled cookies.
