BACONIZED POUTINE

Traditional Poutine consists of french fries and cheese curds topped with a brown gravy consumed by our neighbors to the north. Usually late at night after the bars close.

Ingredients:

Nueske’s Applewood Smoked Bacon
Juusto “baked cheese” with Nueske’s bacon crumbles
French Fries
Butter
Flour
Milk

Begin with French fries. I like to use russet fresh cut and double fry them.
In a cast iron skillet fry one half pound of Nueske’s Applewood Smoked Bacon.
Remove bacon and add a couple of tablespoons of butter and flour to bacon drippings one tablespoon at a time.
Over medium low heat whisk until you have a nice roux.
Add milk to the roux a cup at a time.  About two cups.
Stir until thickened.
Add salt and pepper to taste.  I like McCormick’s Hot Shot.

Crumble cooked bacon and chop up a 6 oz package of Juusto ”‘baked cheese” with Nueske’s bacon crumbles

Pile it all together alternating fries, cheese, bacon and top with hot bacon gravy and more BACON.
