Maya Adler – Pineapple Candied Bacon Macaroons with Coconut Cream Chocolate Ganache.

I caramelize pineapple with bacon fat and sugar. I add that to a coconut almond flour mixture and candied bacon. I serve it with a dark chocolate ganache that instead of using heavy cream I use coconut cream.
